In a saucepan, saute' onions and garlic in oil until tender. Add remaining ingredients except muffins, cheese, and olives. Stir well and simmer, covered for 10 minutes. Place muffins cut side up on a baking sheet. Sprinkle half of the cheese over the muffins and then spread 2 Tbsp. of the sauce over the cheese. Sprinkle the olives and the remaining cheese over the sauce. Bake in a 450 degree oven for 5 minutes or until cheese melts. SERVES 12. Per serving: 124 calories and 3.7 grams of fat. |
