  Veggie Pizza Snacks
  Ingredients:
  • 1/2 cup minced onions
  • 2 large cloves garlic, minced or 1/2 tsp. powder
  • 1 Tbsp. olive oil
  • 1 cup chopped mushrooms
  • 1 15-ounce can tomato sauce
  • 1 Tbsp. grated Parmesan
  • 1/2 tsp. each oregano and sage
  • 1 tsp. basil
  • Dash of cayenne pepper
  • Black pepper to taste
  • 6 english muffins, split
  • 1 cup grated low fat cheese
  • 1/4 cup chopped olives

In a saucepan, saute' onions and garlic in oil until tender. Add remaining ingredients except muffins, cheese, and olives. Stir well and simmer, covered for 10 minutes.

Place muffins cut side up on a baking sheet. Sprinkle half of the cheese over the muffins and then spread 2 Tbsp. of the sauce over the cheese.

Sprinkle the olives and the remaining cheese over the sauce. Bake in a 450 degree oven for 5 minutes or until cheese melts.

SERVES 12. Per serving: 124 calories and 3.7 grams of fat.
