Low Fat Recipes
  Baked Turkey Loaf
  Ingredients:
  • 1½ lbs. of ground turkey
  • 1/4 cup skim milk or chicken stock
  • 1 stalk celery, chopped
  • 1 Tbsp. bell pepper, finely chopped
  • 1/2 cup whole-wheat bread crumbs, toasted
  • 1 egg white, slightly beaten
  • 1/4 cup fresh parsley, minced
  • 1/4 tsp. black pepper
  • 1/2 medium onion, finely chopped
  • 1/4 tsp. dried oregano, crushed
  • 1 clove garlic, crushed
  • 1/2 lb. of lasagna noodles (wheat is best)
  • Nonstick cooking spray
  • 6 oz. low-fat mozzarella cheese, grated
  • 6 cups tomato sauce

Mix all ingredients until just blended. Don't overmix!

Press the mixture into a 4 x 9 inch nonstick loaf pan.

Bake at 325 degrees for 45 minutes to 1 hour. Serve hot.

SERVES 6. Per serving: 237 calories and 11.5 grams of fat.
