  Pefect Mashed Potatos
 

Ingredients

  • 6 white potatos, washed, peeled, and cut into quarters
  • 1/2 cup evaporated skimmed milk
  • 1 tsp. imitation butter flavoring
  • 1/4 cup Parmesan cheese, grated

Boil the potatos until tender (15 to 20 minutes). Drain. Beat with a mixer at a medium-slow speed until smooth.

Add the milk, seasonings, butter flavoring, and cheese. Beat until evenly mixed.

Note: For variety, you can add 1/4 cup plain fat-free yogurt or 1/4 cup fat-free cream cheese in place of the Parmesan cheese - for an even lower fat count.

SERVES 6. Per serving: 148 calories and 1 gram of fat.
