  Fruit Gazpacho
  Ingredients:
  • 1 small orange, cut, peeled, and sectioned
  • 1 cup seedless grapes, halved
  • 3/4 cup blueberries
  • 1/2 cup diced pinapple
  • 1/2 cup diced strawberries
  • 1 cup apple juice
  • 1/2 cup orange juice (natural)
  • Freshly ground pepper

 

Combine orange sections, grapes, blueberries, pineapple, strawberries, and juices in a medium bowl.

Divide the gazpacho into 6 serving bowls; sprinkle each with pepper.

SERVES 6. Per serving: 5 grams of fat but 0 grams saturated fat.
