  Fruit with Chocolate Topping
  Ingredients:
  • 2 cups cut fresh fruit (e.g., kiwi, strawberries, pineapple, peaches, blueberries, green grapes, grapefruit, oranges, bananas, pears, apples)
  • 1/2 cup skim milk ricotta cheese
  • 2 Tbsp. cocoa powder
  • 1 Tbsp. sugar
  • 1 Tbsp. frozen orange juice concentrate, thawed
  • 2 Tbsp. nonfat milk
  • 1/2 tsp. orange extract

Arrange the cut fruit in four shallow dishes.

In a food processor or blender, beat cheese until smooth. Add remaining ingredients and process until blended. (This topping can also be prepared with an electric beater or by hand, but it will have a grainy quality.)

Serve the fruit with a dollop of chocolate sauce on top.

SERVES 4. Per serving: 193 calories and 3 grams of fat.
